Cupcake Friday: Pumpkin Mocha Cupcakes – My Baking Addiction

When I decided to institute Cupcake Fridays, Calin looked conflicted and said it wouldn’t be good for us.  To compromise, I said that I would only do my own cupcakes about once a month, and the rest of the time I would feature other people’s cupcakes that I really want to make.  This is both a safer proposition, because I theoretically won’t be making cupcakes every week, and a dangerous one, because I will actively be looking for cupcakes I want to make in the future.  (Right.  Like I haven’t been doing that all along…)

This week’s featured cupcake recipe is Pumpkin Mocha Cupcakes from My Baking Addiction. Doesn’t it look delicious?

How can you go wrong with pumpkin and mocha and cupcakes?  I will have to go on a quest for pumpkin spice coffee, or maybe just increase the pumpkin spice and use regular coffee.  And I will probably revise it a little to make a cream cheese icing, although looking at that buttercream, I’m not sure why… That looks amazing.

Thanks to My Baking Addiction for being my first featured cupcake recipe.  I look forward to trying it myself!  Stay tuned next week for more cupcakes – will they be home made, or from my wish list?  You’ll have to wait and see!

  1. I happen to currently be taking orders for pumpkin spice coffee as a fundraiser for Spencer’s preschool. Let me know if you’re interested! It’s $12 a pound from Orange County Roasters. PS- Cupcake Friday would be a problem in my house, too!

    • Actually, that would be awesome! Could I get 1 lb? I’m not sure how much more flavored coffee we can drink. :)
